The Black Spruce welcomes Guest Chef Peter Burt
“Here in Newfoundland everything is from the ocean, the reason we are here is the ocean.”
Starting with some plastic buckets, Peter began hauling ocean water up the rocky Newfoundland shoreline and back to Raymonds on his days off. A perfectionist, Peter wanted not only the slightly sweet flavor that the world’s best sea salts exhibit, but the wonderful crunchy texture that the flakey salts supply. Through extensive research, and a lot of Sunday afternoons alone in Raymonds kitchen, Peter perfected what chefs across the country have proclaimed to be one of the finest salts available.
Peter officially formed the Newfoundland Salt Company in 2012 selling salt locally to food aficionados and to chefs he had worked with across the country.
A new chapter is being written in the history of the Newfoundland Salt Company as Peter and his partner Robin Crane have relocated to Bonavista. The new home of the Newfoundland Salt Company is a return to the outport where the history of Newfoundland began.
